Fragrant, Anise Rice

A really simple but tasty variation on basic rice. Goes well with Thai or coconut based curries.

Serving per person

1 ½ mugs water
1 mug white basmati rice
1 star anise
2 cloves
2 cardomon pods

Rinse the rice, add it and the measured water to the pan.

Then make as per usual rice recipe, but add in a cardomon pod and clove per person, and one star anise.

Bring to the boil, then simmer for 12 minutes. DON'T TAKE THE LID OFF!

Turn of the light, and let it steam for a further five mins.

This slow roast aubergine goes good with a nice fresh salad. It's also very good as a side dish to accompany a stir-fry, such as Tofu & Oyster Mushrooms.
