Stir-fried Tofu in Black Bean Sauce

This is a really simple, quick meal. Have it with rice or noodles.

Serving 2

1 small onion, roughly chopped
1 tbls vegetable oil
 soy sauce
1 clove garlic, chopped
1 green pepper
¼ lb oyster mushrooms, sliced
200g tin bamboo shoots, drained
 black bean sauce
150g packet cauldron marinated tofu chunks
3-4 spring onions, finely chopped
small chunk ginger, finely chopped

Heat the oil in a wok. Add the onion, ginger and garlic. After a moment add the tofu. Stir constantly.

After a further minute add the mushrooms, and then the peppers. Slosh in some soy sauce.

Stir-fry for a couple of minutes, then add the bamboo shoots and spring onions.

Finally slosh in some black bean sauce, stir through to warm, then serve immediately.
